Easy Gourmet: Singapore Curry

I distinctly remember the first time my mom made me curry; I was in Taipei back then for my summer vacation and she's fond of cooking for me whenever I'm there and it was one of the best curries I have ever tasted. No bias or joke. Of course, she passed on to me this little and quick meal secret since I also have my own family now. :)


That secret is found in this box and you can make this into a meal in just 20-25 minutes and i'll show you how. :)



My mom usually brings me home boxes of these in Taiwan, because it's much cheaper there. But you can also get a box of this at SM Hypermarkets or Rustan's supermarket. Last time I checked, they're around Php 240. :)

Now, let's get cooking! The main ingredients are the ones you find on my photo above. As per the box, it says you need 720 g of chicken (I lack chicken on my photo hihihi) and 3 potatoes. I personally like adding carrots. It's really up to you. 

Inside the box you will find two packets and instructions on how to cook it. I'll just elaborate more here on my blog. :)


Before anything else, I rinse my veggies first and cut them into tiny pieces. You can also dice them if you prefer. As for the chicken, you can buy chicken breast and slice them into chunks. But I normally don't do that anymore. I get the 'menudo cut' (according to SM Hypermarket) at the grocery since it's already in the perfect size that I want and saves me the time in slicing. :)

After that, you start cooking! What you need...

Water (for step 1) 400 ml
Singapore Curry Paste (A) 1 packet
Chicken 720 g
Potatoes, cut into chunks 3nos
Singapore Curry Premix (B) 1 packet
Water (for step 5) 260 ml
* The packets have A & B indicated on them, so you know which one to use first :)


Step 1- In a pot, add Singapore Curry Paste into 400 ml of water. Stir well and bring to boil on high heat, stirring occasionally.


Step 2- Add chicken, potatoes and carrots, stir well and bring to boil. Lower heat, cover pot and simmer for 10 minutes on medium heat.



Step 3 - In a separate bowl, stir Singapore Curry Premix into 260 ml water. Mix well and add to pot. Simmer for 7 minutes on low heat. Do not cover the pot. Stir occasionally and ensure that the gravy does not boil.


After Step 3, you're officially done cooking!:) Ready to serve your easy gourmet meal! You can eat this with either bread or rice. :) 


Even if you're not used to cooking or just starting to learn, you'll easily get this recipe. :)
